We’ve had more nice weather and our trees are busting out all over (and so are our allergies). Stu is already mowing twice a week! Not much has changed here, we’re still in stay-at-home mode other than a trip to pick up groceries. We did manage to get the dogs out for some doggy daycare plus a full grooming. They were in bad need of a bath! This is the first full groom our new gal has done and she did a great job. She shared some photos on Facebook.

We’ve tried some new things as we dug down into the bottom of our freezer to use up the oldest meat. We found some pork cutlets and used the air dryer to cook them after grinding up some BBQ pork rinds for breading. 

They were such a good success, I decided to try making meatloaf using the pork rinds in place of bread crumbs. To save on cooking time, I opted for sort of meatball muffins. Another success!

Delicious and we will be making them again. In fact, our wedding anniversary is the 11th and since we can’t go out to celebrate, I think a meatloaf will be in order along with some nice wine.

Sunday was our warmest day yet, and Stu did burgers on the grill – bacon cheeseburgers. More yumminess!

The #2doods are loving the warm weather and stay outside most of the day. Then this is the view in our foyer/hallway. Matching bookends at night!

We will continue staying home for as long as it’s needed. We’re starting to see this beast grow and will do our best to escape its grasp. The one thing we need to get accomplished soon is our “After I Die” books, leaving details of our accounts/memberships/etc, both off-line and on-line, for our families. There is much to deal with but I’ve found a great site online with template sheets to help us get organized. That has a higher priority for me since I have many accounts tied with my books and writing that would need to be dealt with. So that is my first chore this week and no writing will be done until I finish that project. 


Think about it. Would your family know what to do with your email, Facebook/social media accounts? Would they know what memberships you have and the ones that are automatically renewed? What about bank accounts, mortgage information, insurance policies (life, vehicle, home)?
